I recently returned from an absolutely glorious trip to South Korea. We spent our time in Seoul and Busan and enjoyed every second of the trip.
One thing we struggled with a little was the lack of vegetarian food. Three out of four of us were vegetarian and we did have to put a lot of effort into finding food.
Now that I’m home, I’m keen to develop vegetarian versions of the food we ate and the food we missed out on. I had bibimbap at a number of different temple food restaurants, but I also tried it at Woojung Dolsot in Busan. We had to use Google translate to ask for a version without meat but the owner seemed happy to oblige. His kindness and readiness to adapt the dish made us wonder if we could have tried this in more places, but I digress.
