Quinoa buckwheat breakfast muffins (gluten free)
A wholesome and delicious gluten free buckwheat flour muffin filled with cooked quinoa, banana, yoghurt and fresh blueberries.
I am not a morning person at all. There would be nothing worse than getting up to make a full breakfast every morning, in my humble opinion. I want something easy in the fridge that I can grab and return to bed (espresso in the other hand, of course).
These muffins are that grab and go recipe I desperately needed. I’ve been searching for more wholesome recipes that are yeast free at the moment (so sadly, no buckwheat bread) and this is my new favourite.
