I’m not necessarily big on the viral food trends, but there are a few I’m irked to miss out on with dietary constraints. I’ve made date bark bites for a low FODMAP take on the viral date bark and I tackled a gluten free version of the viral pumpkin shaped bagels.

The dense bean salad has intrigued me from the moment I saw it. Every iteration looks delicious and unique. As someone who is a fussy pescatarian, gets the egg ick frequently and is also gluten free AND low FODMAP, I really struggle to get enough protein in.

Enter: the low FODMAP dense bean salad. This salad takes the concept created by Violet Cooks and tweaks it to be low FODMAP and vegetarian. It can also be low FODMAP non-vegetarian, if that’s your thing. It truly is easy, delicious and something I look forward to when I know I have it in the fridge.
