Low FODMAP curry can be a bit of a slog to get on the table. My low FODMAP vegetarian curry recipe is one of my absolute favourites, but it does take a bit of time to prepare and a number of spices. I wanted to develop a cheaty and speedy ‘curry’ - an inauthentic but delicious solution for busy weeknights.
