Gluten free choux pastry without xanthan gum

A delicious and easy recipe from my second cookbook, Intolerance Friendly Kitchen.

I have been very busy working on a bunch of new Ninja Creami recipes this week. As such, I fell a little behind on my Substack writing. I wanted to offer this recipe for gluten free choux pastry as a little apology (as well as a bunch of new recipes coming this week).

This is a recipe that was originally published in my cookbook, Intolerance Friendly Kitchen. The cookbook is only available in Australia (where I live) so I wanted to give this recipe an international home.
